Can anyone point me in the right direction to some ripping software that will let me rip multiple songs as one long MP3 file? 

If you are on Linux (or some other Unix), definitively <A HREF="http://www.xiph.org/paranoia" target="_new">cdparanoia</A> (this is its default mode of ripping). As said a number of times here, it is excellent (but slow) ripper.
